Baker’s yeast was discovered and isolated over a hundred years ago and is now used in virtually every bread made. It makes bread rise fast but sacrifices the delicious flavor and nutritional advantages of naturally fermented bread.
Naturally fermented bread is commonly referred to as ‘sourdough’, however, most commercially available breads labeled as sourdough just use baker’s yeast and then add flavoring to mimic the taste and texture of true, 100% naturally fermented sourdough bread.
Other commercially available sourdoughs will not compare in flavor or texture due to the extended fermentation process.
